What Is the Difference Between Freeze-Dried and Spray-Dried Instant Coffee?

Freeze-drying (lyophilization) removes water by freezing the brewed coffee concentrate and then converting ice directly to vapor in a vacuum — preserving volatile aromatic compounds. Spray-drying uses high heat to evaporate water quickly, which destroys more of the delicate flavor molecules. Freeze-dried instant coffee tastes significantly better and retains more of the original roast character. It's also more expensive to produce, which is why premium brands use it.
